Creamy Vanilla Ice Cream

Baked Black Bean and Rice Tacos

Ingredients:

  • 1 cup cooked rice

  • 1 can 15 oz black beans, drained and rinsed

  • 1 cup corn kernels

  • 1 cup diced tomatoes

  • 1/2 cup diced red onion

  • 1/2 cup diced bell pepper

  • 1 tsp chili powder

  • 1/2 tsp cumin

  • Salt and pepper to taste

  • 8 small tortillas

  • 1 cup shredded cheddar cheese

  • 1/4 cup fresh cilantro, chopped

  • Sour cream and salsa for serving

Instructions:

Start by heating the oven to 350F 175C


Put the black beans, corn, diced tomatoes, red onion, bell pepper, and cooked rice in a large bowl


Put the cumin, salt, pepper, and chili powder into the mix


Make sure to stir the ingredients together well


Spread the rice and bean mixture out evenly on each tortilla after putting them on a baking sheet


Put some cheddar cheese shreds on top of every taco


To make a taco, fold the tortillas in half


Put it in an oven that is already hot and bake for 10 to 12 minutes, or until the tortillas are golden and the cheese melts and bubbles


Take it out of the oven and add chopped cilantro on top


Put black bean and rice tacos in the oven and bake them


Then, top them with sour cream and salsa


Enjoy your tasty tacos that you made yourself!

  • 1 cup white wine

  • 1 can 28 oz diced tomatoes

  • 2 cups fish or seafood broth

  • 1 tsp dried oregano

  • 1 tsp dried thyme

  • 1/2 tsp red pepper flakes

  • Salt and pepper to taste

  • 1 lb mixed seafood such as shrimp, mussels, and firm fish fillets

  • 1/4 cup chopped fresh parsley

  • Crusty bread for serving

Instructions:

Put olive oil in a big pot and heat it over medium-low heat


Chopped onion, garlic, and bell pepper should be added


About 5 minutes of cooking will soften the food


Add the white wine and cook for two minutes to let the alcohol evaporate


Add the fish broth, oregano, thyme, red pepper flakes, salt, and pepper, and mix them in


Bring the mixture to a low boil, then stir it every now and then for 15 minutes


After you add the mixed seafood to the pot, let it cook for another 5 to 7 minutes, or until the seafood is fully cooked


Check the seasoning and make changes if needed


Before you serve the stew, sprinkle it with chopped parsley


Hot bread to dip should be served with it

Dragon Roll Sushi

Ingredients:

  • 1 cup sushi rice

  • 2 nori seaweed sheets

  • 4 oz sushi-grade salmon

  • 4 oz sushi-grade tuna

  • 1 ripe avocado

  • 1/2 cucumber

  • 1 tbsp rice vinegar

  • 1 tbsp sugar

  • 1/2 tsp salt

  • Soy sauce, for serving

Instructions:

Cook sushi rice according to package instructions


Once cooked, mix in rice vinegar, sugar, and salt


Let it cool


Slice the salmon, tuna, avocado, and cucumber into thin strips


Place a sheet of nori on a bamboo sushi mat


Spread half of the sushi rice evenly over the nori


Arrange half of the salmon, tuna, avocado, and cucumber strips along the center of the rice


Roll the sushi tightly using the bamboo mat


Slice the roll into 6-8 pieces


Repeat the process with the remaining ingredients


To assemble the dragon roll, place slices of avocado on top of each sushi piece, then drizzle with spicy mayo and eel sauce


Serve with soy sauce, pickled ginger, and wasabi on the side
