Warm Winter Spice Smoothie

Warm up your winter mornings with this comforting and nutritious warm smoothie. Packed with the flavors of cinnamon, nutmeg, and cloves, it's like a cozy hug in a mug.

Ingredients:

  • 1 cup of almond milk

  • 1 ripe banana

  • 1/2 cup of rolled oats

  • 1/4 cup of chopped dates

  • 1/2 teaspoon of ground cinnamon

  • 1/4 teaspoon of ground nutmeg

  • 1/4 teaspoon of ground cloves

  • 1/4 teaspoon of vanilla extract

  • 1 tablespoon of honey optional

  • Whipped cream for garnish optional

Instructions:

In a small saucepan, heat the almond milk over low heat until it's warm but not boiling


In a blender, combine the warm almond milk, ripe banana, rolled oats, chopped dates, ground cinnamon, ground nutmeg, ground cloves, and vanilla extract


Blend until the mixture is smooth and all the ingredients are well combined


If you like it sweeter, you can add a tablespoon of honey and blend again


Pour the smoothie into a mug or a glass


Optionally, top it with a dollop of whipped cream and a sprinkle of ground cinnamon for an extra indulgent treat


Serve immediately and enjoy your warm winter spice smoothie!

Vegan Eggplant Pasta

A hearty and flavorful vegan pasta dish featuring roasted eggplant, caramelized onions, and cherry tomatoes. Perfect for a cozy dinner!

Ingredients:

  • 1 large eggplant, diced

  • 2 large onions, thinly sliced

  • 4 cloves garlic, minced

  • 2 cups cherry tomatoes, halved

  • 1/4 cup olive oil

  • Salt and pepper, to taste

  • 1 lb pasta of your choice

  • Fresh basil leaves, for garnish

Instructions:

Get the oven ready by heating it up to 400F 200C


Sprinkle olive oil over diced eggplant on a baking sheet and season with salt and pepper


Roast for twenty to twenty-five minutes, or until soft and brown


Warm up the olive oil in a big pan over medium-low heat


It will take about 15 to 20 minutes of cooking after adding the sliced onions until the onions turn caramelized


When you add the minced garlic, cook for another two minutes or until the garlic smells good


Add the roasted eggplant and cherry tomatoes and mix well


Add five more minutes of cooking to let the flavors blend


In the meantime, cook the pasta until it's al dente according to the directions on the package


Save 1/2 cup of the pasta water, and then drain the pasta


Mix the cooked pasta with the eggplant mixture


If you need to, add the pasta water you saved to make a smooth sauce


Before serving, sprinkle with fresh basil leaves

Brownie Whoopie Pies

A delightful twist on traditional brownies, these whoopie pies combine rich chocolate brownie cookies with a fluffy marshmallow and buttercream filling.

Ingredients:

  • 1 box brownie mix

  • 1/4 cup vegetable oil

  • 2 large eggs

  • 1/4 cup water

  • 1 cup powdered sugar

  • 1/2 cup unsalted butter, softened

  • 1 teaspoon vanilla extract

  • 1 cup marshmallow fluff

Instructions:

Preheat oven to 350F 175C


Line baking sheets with parchment paper


In a large mixing bowl, combine brownie mix, vegetable oil, eggs, and water


Mix until well combined


Drop tablespoon-sized portions of batter onto prepared baking sheets, spacing them about 2 inches apart


Bake for 8-10 minutes, or until edges are set and centers are slightly soft


Remove from oven and let cool on baking sheets for 5 minutes before transferring to wire racks to cool completely


Meanwhile, in a separate mixing bowl, beat together powdered sugar, softened butter, and vanilla extract until smooth and creamy


Spread marshmallow fluff onto the flat side of half of the cooled brownie cookies


Top with a dollop of the buttercream mixture, then sandwich with another brownie cookie, flat side down


Repeat with remaining brownie cookies and filling


Serve and enjoy!

Chicken and Dumplings Slow Cooker

A slow cooker chicken and dumplings recipe that is hearty and comforting. It's great for busy days.

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 2 cans cream of chicken soup

  • 1 onion, diced

  • 3 carrots, sliced

  • 3 celery stalks, sliced

  • 2 cups chicken broth

  • 1 teaspoon garlic powder

  • 1 teaspoon dried thyme

  • Salt and pepper to taste

  • 1 cup frozen peas

  • 1 cup all-purpose flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1/2 cup milk

  • 2 tablespoons melted butter

Instructions:

Put onion, carrots, celery, chicken broth, garlic powder, thyme, salt, and pepper in a slow cooker


Add the chicken breasts and mix them in


Cover and cook on low for 6 to 8 hours or high for 4 hours, or until the vegetables are soft and the chicken is cooked all the way through


Mix flour, baking powder, salt, milk, and melted butter in a bowl about 30 minutes before you want to serve the bread


This will make a dough


Scoop out pieces of dough and place them on top of the chicken and vegetables in the slow cooker


Put the lid on top and cook on high for another 30 minutes, or until the dumplings are fully cooked


During the last 10 minutes of cooking, add the frozen peas and mix them in


Enjoy while hot!

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full


Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean


Remove from oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool completely

In this Cheesy Bacon Corn Dip, you can't say no to the delicious mix of creamy cheeses, salty bacon, and sweet corn. This dip is great for parties or game nights and everyone will love it!

Ingredients:

  • 1 8 oz package cream cheese, softened

  • 1 cup shredded cheddar cheese

  • 1 cup cooked bacon, crumbled

  • 1 cup frozen corn, thawed

  • 1/2 cup sour cream

  • 1/4 cup mayonnaise

  • 1/4 cup chopped green onions

  • 1/4 teaspoon garlic powder

  • Salt and pepper to taste

Instructions:

Warm the oven up to 190C 375F


Put cream cheese, cheddar cheese, corn, bacon, sour cream, mayonnaise, green onions, garlic powder, salt, and pepper in a bowl


Mix everything together well


Put the mixture in a baking dish and make sure it's spread out evenly


Warm the oven up and put the dip in it


Bake for 20 to 25 minutes, or until the top is bubbly and golden brown

Balsamic Pickled Shiitake Crostini

Ingredients:

  • 1 cup shiitake mushrooms, sliced

  • 1/2 cup balsamic vinegar

  • 1/4 cup water

  • 2 tablespoons sugar

  • 1 baguette, sliced into thin rounds

Instructions:

Egg in a Hole

To make Egg in a Hole, you fry an egg and put it in a hole in a piece of bread. It's easy to make and tastes great!

Ingredients:

  • 1 slice of bread

  • 1 egg

  • Butter or cooking oil

  • Salt and pepper to taste

Instructions:

Make a hole in the middle of the bread slice with a glass or a cookie cutter


Put a frying pan or skillet over medium-low heat and add a little butter or cooking oil to coat it


Put the piece of bread in the pan and crack the egg into the hole in it


Add a little salt and pepper to the egg


Toast the bread on the bottom for two to three minutes, or until the egg white sets


Carefully flip the egg and bread together, and cook for another two to three minutes, or until the egg is done the way you like it


Take it out of the pan, serve it hot, and enjoy!

Chicken Alfredo Meatball Subs

Enjoy these tasty Chicken Alfredo Meatball Subs, which are a new take on the classic meatball sub with a creamy Alfredo sauce. These subs are delicious and filling, just the way I like them.

Ingredients:

  • 1 lb ground chicken

  • 1/2 cup bread crumbs

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley

  • 1 egg, beaten

  • Salt and pepper to taste

  • 1 cup Alfredo sauce

  • 4 sub rolls

  • 1 cup shredded mozzarella cheese

  • Fresh basil leaves for garnish

Instructions:

Preheat oven to 375F 190C


In a mixing bowl, combine ground chicken, bread crumbs, Parmesan cheese, parsley, beaten egg, salt, and pepper


Mix well


Form the mixture into meatballs of desired size and place them on a baking sheet lined with parchment paper


Bake in the preheated oven for 20-25 minutes or until meatballs are cooked through


While meatballs are baking, heat Alfredo sauce in a saucepan over medium heat until warmed through


Once meatballs are cooked, remove from the oven and place them in a bowl


Pour the warm Alfredo sauce over the meatballs, tossing gently to coat


Slice the sub rolls horizontally and place the meatballs with Alfredo sauce inside each roll


Sprinkle shredded mozzarella cheese on top of the meatballs


Return the subs to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly


Garnish with fresh basil leaves before serving
