Coconut Flour Paleo Pancakes

Ingredients:

  • 1 8 oz package cream cheese, softened

  • 1 cup shredded cheddar cheese

  • 1 cup cooked bacon, crumbled

  • 1 cup frozen corn, thawed

  • 1/2 cup sour cream

  • 1/4 cup mayonnaise

  • 1/4 cup chopped green onions

  • 1/4 teaspoon garlic powder

  • Salt and pepper to taste

Instructions:

Warm the oven up to 190C 375F


Put cream cheese, cheddar cheese, corn, bacon, sour cream, mayonnaise, green onions, garlic powder, salt, and pepper in a bowl


Mix everything together well


Put the mixture in a baking dish and make sure it's spread out evenly


Warm the oven up and put the dip in it


Bake for 20 to 25 minutes, or until the top is bubbly and golden brown


Take it out of the oven and let it cool down a bit before you serve it


If you want, you can add more chopped green onions as a garnish


Warm it up and serve it with crackers or tortilla chips

Balsamic Pickled Shiitake Crostini

Ingredients:

  • 1 cup shiitake mushrooms, sliced

  • 1/2 cup balsamic vinegar

  • 1/4 cup water

  • 2 tablespoons sugar

  • 1 baguette, sliced into thin rounds

  • 1/4 cup olive oil

  • Salt and pepper to taste

  • Fresh thyme leaves for garnish

Instructions:

Egg in a Hole

To make Egg in a Hole, you fry an egg and put it in a hole in a piece of bread. It's easy to make and tastes great!

Ingredients:

  • 1 slice of bread

  • 1 egg

  • Butter or cooking oil

  • Salt and pepper to taste

Instructions:

Make a hole in the middle of the bread slice with a glass or a cookie cutter


Put a frying pan or skillet over medium-low heat and add a little butter or cooking oil to coat it


Put the piece of bread in the pan and crack the egg into the hole in it


Add a little salt and pepper to the egg


Toast the bread on the bottom for two to three minutes, or until the egg white sets


Carefully flip the egg and bread together, and cook for another two to three minutes, or until the egg is done the way you like it


Take it out of the pan, serve it hot, and enjoy!

Ingredients:

  • 1 lb ground chicken

  • 1/2 cup bread crumbs

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley

  • 1 egg, beaten

  • Salt and pepper to taste

  • 1 cup Alfredo sauce

  • 4 sub rolls

  • 1 cup shredded mozzarella cheese

  • Fresh basil leaves for garnish

Instructions:

Preheat oven to 375F 190C


In a mixing bowl, combine ground chicken, bread crumbs, Parmesan cheese, parsley, beaten egg, salt, and pepper


Mix well


Form the mixture into meatballs of desired size and place them on a baking sheet lined with parchment paper


Bake in the preheated oven for 20-25 minutes or until meatballs are cooked through


While meatballs are baking, heat Alfredo sauce in a saucepan over medium heat until warmed through
